Description

A classic appetizer featuring toasted Italian bread topped with a vibrant mixture of tomatoes, garlic, basil, and balsamic vinegar.


Ingredients

  • 8 slices Italian bread (½-inch thick)
  • ¼ cup olive oil (Can be replaced with avocado oil)
  • 1 clove garlic (cut in half)
  • 2 cups fresh grape or cherry tomatoes (diced)
  • ¼ cup freshly grated parmesan cheese
  • ¼ cup fresh basil ribbons
  • 2 cloves garlic (minced)
  • to taste Salt and fresh ground pepper
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400°F.
  2. Line a baking sheet with parchment paper or foil.
  3. Brush each slice of Italian bread with olive oil, laying them oiled-side down on the baking sheet.
  4. Toast the bread in the oven for about 8 to 10 minutes, keeping a watchful eye.
  5. Once golden, flip the bread slices and rub the cut side of the garlic cloves over each piece.
  6. In a mixing bowl, combine diced tomatoes, parmesan, basil, and minced garlic.
  7. Season with salt and pepper and toss lightly.
  8. Drizzle in the olive oil and balsamic vinegar, mixing everything thoroughly.
  9. Scoop generous spoonfuls of the tomato mixture onto each garlic bread slice.
  10. Drizzle with balsamic glaze just before serving.

Notes

  • This bruschetta is best served fresh out of the oven.
  • For a variation, mix in diced mozzarella cheese with the tomato topping.
