- 8 slices Italian bread (½-inch thick)
- ¼ cup olive oil (Can be replaced with avocado oil)
- 1 clove garlic (cut in half)
- 2 cups fresh grape or cherry tomatoes (diced)
- ¼ cup freshly grated parmesan cheese
- ¼ cup fresh basil ribbons
- 2 cloves garlic (minced)
- to taste Salt and fresh ground pepper
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 400°F.
- Line a baking sheet with parchment paper or foil.
- Brush each slice of Italian bread with olive oil, laying them oiled-side down on the baking sheet.
- Toast the bread in the oven for about 8 to 10 minutes, keeping a watchful eye.
- Once golden, flip the bread slices and rub the cut side of the garlic cloves over each piece.
- In a mixing bowl, combine diced tomatoes, parmesan, basil, and minced garlic.
- Season with salt and pepper and toss lightly.
- Drizzle in the olive oil and balsamic vinegar, mixing everything thoroughly.
- Scoop generous spoonfuls of the tomato mixture onto each garlic bread slice.
- Drizzle with balsamic glaze just before serving.
Notes
- This bruschetta is best served fresh out of the oven.
- For a variation, mix in diced mozzarella cheese with the tomato topping.
