Description
A rich and moist Coca-Cola cake topped with a fudgy frosting.
Ingredients
Scale
- 2 cups flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 cup Coca-Cola
- 1 cup salted butter
- 6 tablespoons baking cocoa
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (*see notes)
- 1/2 cup salted butter
- 3 tablespoons baking cocoa
- 6 tablespoons Coca-Cola
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
Instructions
- Preheat oven to 350 degrees F. Grease a 9 x 13-inch cake pan.
- Combine the dry ingredients in a mixing bowl, whisking the flour, sugar, and baking soda together.
- Put the butter, cocoa powder, and Coca-Cola in a small saucepan. Whisk it together, place it on medium heat, and bring it to a boil, stirring constantly.
- Once it starts boiling, remove from heat and pour into the flour mixture.
- Stir everything together until thoroughly combined.
- Add the vanilla, buttermilk, and eggs, stirring until well mixed.
- Pour the cake batter into the prepared baking pan.
- Bake in the preheated oven for 30 minutes. The cake is done when a toothpick inserted into the center comes out clean.
- For the frosting, mix the butter, cocoa powder, vanilla extract, and Coca-Cola in a medium saucepan. Bring to a boil while stirring constantly.
- Once boiling, remove from heat, add the powdered sugar, and mix until smooth and creamy.
- Pour the fudgy frosting over the hot cake immediately.
- Let the cake cool for about 10 minutes so the frosting hardens.
Notes
- Use buttermilk for added moisture; if you don’t have any, you can make a substitute by adding 1/2 tablespoon of vinegar to 1/2 cup of milk and letting it sit for about 5 minutes.
