Description

A rich and moist Coca-Cola cake topped with a fudgy frosting.


Ingredients

Scale
  • 2 cups flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 cup Coca-Cola
  • 1 cup salted butter
  • 6 tablespoons baking cocoa
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (*see notes)
  • 1/2 cup salted butter
  • 3 tablespoons baking cocoa
  • 6 tablespoons Coca-Cola
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9 x 13-inch cake pan.
  2. Combine the dry ingredients in a mixing bowl, whisking the flour, sugar, and baking soda together.
  3. Put the butter, cocoa powder, and Coca-Cola in a small saucepan. Whisk it together, place it on medium heat, and bring it to a boil, stirring constantly.
  4. Once it starts boiling, remove from heat and pour into the flour mixture.
  5. Stir everything together until thoroughly combined.
  6. Add the vanilla, buttermilk, and eggs, stirring until well mixed.
  7. Pour the cake batter into the prepared baking pan.
  8. Bake in the preheated oven for 30 minutes. The cake is done when a toothpick inserted into the center comes out clean.
  9. For the frosting, mix the butter, cocoa powder, vanilla extract, and Coca-Cola in a medium saucepan. Bring to a boil while stirring constantly.
  10. Once boiling, remove from heat, add the powdered sugar, and mix until smooth and creamy.
  11. Pour the fudgy frosting over the hot cake immediately.
  12. Let the cake cool for about 10 minutes so the frosting hardens.

Notes

  • Use buttermilk for added moisture; if you don’t have any, you can make a substitute by adding 1/2 tablespoon of vinegar to 1/2 cup of milk and letting it sit for about 5 minutes.
