Description

Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 cups potatoes, peeled and cubed
  • 4 cups beef broth (Whole30 compliant)
  • 1 cup diced tomatoes (no sugar added)
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the beef stew meat and brown on all sides, about 6-8 minutes. Remove meat and set aside.
  2. Add onion, carrots, and celery to the same pot. Sauté for 5 minutes until vegetables are slightly softened.
  3. Add garlic, thyme, and rosemary. Stir for 1 minute until fragrant.
  4. Return browned beef to the pot, then add potatoes, diced tomatoes, and beef broth. Season with salt and pepper. Stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour, or until beef is tender and vegetables are cooked through.
  6. Adjust seasoning to taste. Garnish with fresh parsley before serving.
