- 1 cup creamy peanut butter
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix together peanut butter, sugar, egg, vanilla extract, and baking soda until smooth.
- Roll dough into 1-inch balls and place on the prepared baking sheet.
- Flatten each ball slightly with a fork, making a crisscross pattern.
- Bake for 9–11 minutes, or until edges are set and lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, add chocolate chips or chopped nuts to the dough.
- These cookies can be stored in an airtight container for up to a week.
