Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, paprika, cumin, chili powder, salt, and black pepper.
- Add the shrimp to the marinade, ensuring each piece is well coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes.
- While the shrimp is marinating, preheat your grill to medium-high heat.
- Thread the marinated shrimp onto skewers. Make sure they’re close together but not overcrowded to ensure even cooking.
- Place the skewers on the preheated grill and cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque.
- Carefully remove the skewers from the grill, using tongs to avoid burns.
- Sprinkle the grilled shrimp with fresh parsley for a pop of color.
- Arrange shrimp on a platter and serve with lemon wedges on the side.
