Description

Delicious corn fritters served with a spicy chili lime aioli.


Ingredients

  • 2 cups fresh corn kernels (or frozen)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Oil for frying
  • 1 cup mayonnaise
  • Juice of 1 lime
  • 1 tbsp chili garlic sauce

Instructions

  1. In a large bowl, mix together fresh corn, flour, baking powder, eggs, chili powder, salt, and pepper until just combined.
  2. Heat oil in a non-stick skillet over medium heat until shimmering.
  3. Spoon about two tablespoons of batter into the skillet for each fritter, ensuring not to overcrowd the pan.
  4. Cook for 3 minutes on each side or until golden brown and crispy.
  5. For the aioli, whisk together mayonnaise, lime juice, and chili garlic sauce in a separate bowl.
  6. Drain cooked fritters on paper towels and serve warm with the chili lime aioli.
