Description

A delicious grilled cheese sandwich filled with ricotta, sun-dried tomatoes, fresh spinach, and mozzarella.


Ingredients

  • 4 slices sourdough bread
  • 1 cup ricotta cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • Optional: Fresh basil leaves for garnish

Instructions

  1. In a medium bowl, combine the ricotta cheese, chopped sun-dried tomatoes, chopped spinach, and mozzarella cheese. Mix well until all ingredients are evenly distributed. Season with salt and pepper to taste.
  2. In a large skillet, heat one tablespoon of olive oil over medium heat.
  3. Take two slices of sourdough bread. Spread half of the ricotta filling evenly on one slice. Top with the second slice of bread. Repeat with the remaining ingredients to form a second sandwich.
  4. Place the sandwiches in the heated skillet. Cook for about 3-4 minutes or until the bread is golden brown.
  5. Carefully flip the sandwiches using a spatula. Add the remaining olive oil around the edges of the bread if needed. Cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
  6. Once both sides are golden and the cheese is gooey, remove the sandwiches from the skillet. Allow them to cool for a minute before slicing in half.
  7. If desired, add fresh basil leaves for an added touch of flavor and presentation.
