Creamy Spinach Penne

Description

A delicious creamy pasta dish with spinach and parmesan.


Ingredients

Scale
  • 8 ounces penne (or similar pasta)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 2 tablespoons flour
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 8 ounces baby spinach
  • 1/3 cup grated parmesan cheese
  • 1/4 tsp ground nutmeg
  • salt and pepper (to taste)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Cook the pasta according to the package directions. Reserve ½ cup of the pasta water. Drain and set aside.
  2. Melt the butter in a large skillet over medium heat. Add the garlic and cook for 1 minute. Add the flour and stir until mixed throughout.
  3. Add the heavy cream and chicken broth. Bring to a gentle simmer and cook for 2-3 minutes.
  4. Stir in the spinach, parmesan, and nutmeg. Cook until the spinach has shrunk and wilted.
  5. Mix in the cooked pasta. If the sauce is too runny, let the pasta boil for a few minutes. If the sauce is too thick, add some of the reserved pasta water. Season to taste with salt and pepper and finish with fresh lemon juice.

Notes

  • This recipe can be easily adjusted for different types of pasta.
  • For a vegetarian option, use vegetable broth instead of chicken broth.
