Delicious peanut butter cookies topped with chocolate kisses.

- 1 large egg
- 1 teaspoon vanilla extract
- 1 cups all-purpose flour

- 24 chocolate kisses, unwrapped
- 0 cups granulated sugar (for rolling)
Instructions
- In a large mixing bowl, cream together the butter, brown sugar, granulated sugar, and peanut butter until light and fluffy.
- Add the egg and vanilla extract and mix until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Chill the dough in the refrigerator for 30 minutes to make it easier to handle.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll tablespoon-sized balls of dough and coat them in granulated sugar.
- Place on baking sheet about 2 inches apart.
- Bake for 8–10 minutes or until just set and the edges are lightly golden.
- Immediately press a chocolate kiss into the center of each cookie.
- Allow to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Ensure your butter is at room temperature for better creaming.
- Rolling the dough in sugar adds a nice texture to the cookies.
