- 1 pound ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 8 ounces egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of salted water, cook the egg noodles according to package instructions until al dente (typically 7-9 minutes). Drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the diced onions and cook for 3-4 minutes until they become translucent and start to soften.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Add the ground turkey to the same skillet, breaking it up with a wooden spoon as it cooks, until no pink remains, about 5-6 minutes.
- Stir in the sliced mushrooms, paprika, salt, and pepper. Cook for another 5 minutes until the mushrooms have released their moisture and started to brown slightly.
- Whisk the flour into the chicken broth in a separate bowl until smooth, then pour the mixture into the skillet. Bring to a gentle simmer and cook for 2-3 minutes until the sauce begins to thicken.
- Reduce heat to low and stir in the sour cream until fully incorporated.
- Gently toss the cooked egg noodles with the turkey mushroom mixture until everything is well-coated. Serve immediately, garnished with freshly chopped parsley.
