Description
Delicious homemade blueberry buns that are soft, fluffy, and topped with a sweet glaze.

- 500 g all-purpose flour
- 1 packet (7 g) dry yeast
- 250 ml lukewarm milk
- 75 g sugar
- 75 g softened butter
- 1 egg
- 1 pinch salt
- 1 tsp ground cardamom (optional but traditional)
- 200 g fresh or frozen blueberries
- 2 tbsp sugar
- 1 tbsp cornstarch
- juice of half a lemon
- 1 tsp vanilla extract
- 100 g powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Make the Dough: In a large mixing bowl, combine the flour, dry yeast, sugar, salt, and cardamom. Warm the milk slightly (it should be warm to the touch, not hot), then pour it into the dry ingredients. Add the softened butter and the egg. Knead everything into a smooth dough for about 8–10 minutes. Cover the bowl with a clean towel and let the dough rise in a warm spot for about 1 hour, or until doubled in size.
- Prepare the Blueberry Filling: While the dough rises, make your blueberry mixture. In a saucepan over medium heat, combine the blueberries, sugar, lemon juice, and vanilla. Stir in the cornstarch and let the mixture simmer for 5–10 minutes until it thickens. Let it cool completely.
- Roll and Fill the Dough: Once the dough has risen, turn it out onto a floured surface and roll it into a rectangle, about 30 x 40 cm. Spread the cooled blueberry filling evenly across the dough, leaving a small border around the edges.
- Roll and Slice: Starting from the longer side, roll the dough tightly into a log. Slice the log into 12 even pieces and place them cut-side up on a parchment-lined baking sheet or in a greased baking dish, spacing them slightly apart.
- Second Rise: Cover the buns loosely with a kitchen towel and let them rise again for 30–40 minutes.
- Bake: Preheat your oven to 180°C (350°F) and bake the buns for 20–25 minutes or until golden brown and bubbling.
- Glaze and Serve: Mix powdered sugar with milk and vanilla extract until smooth. Drizzle the glaze over the warm buns and let it set for a few minutes before serving.
Notes
- For best results, ensure your yeast is fresh for the dough to rise properly.
- You can use either fresh or frozen blueberries for the filling.
- The optional cardamom adds a nice flavor but can be omitted if desired.
