- 1 lb flank steak
- 2 tbsp extra virgin olive oil
- 4 cloves fresh garlic, minced
- 28 oz canned San Marzano tomatoes
- 1/4 cup fresh basil leaves, chopped
- 1/2 tsp red pepper flakes (adjust to taste)
- Salt to taste
- Pepper to taste
Instructions
- Bring flank steak to room temperature and season both sides with salt and pepper.
- In a large skillet over medium-high heat, heat olive oil until shimmering. Sear the steak for 4-5 minutes per side until medium-rare. Remove and let rest.
- In the same pan, sauté minced garlic for about 30 seconds until fragrant.
- Add canned tomatoes with their juices, breaking them up as they cook. Stir in salt, pepper, and red pepper flakes.
- Simmer sauce for 10 minutes until thickened.
- Slice the rested steak against the grain and return it to the pan with sauce. Simmer briefly before serving hot over pasta or crusty bread.
