Delicious and easy to prepare peanut butter and jelly rolls that bring back childhood memories.
Ingredients

- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/4 cup unsalted butter, melted
- 1/2 cup creamy peanut butter
- 1/3 cup jelly or jam of your choice
- Optional: a handful of chopped peanuts or chocolate chips
Instructions
- Preheat your oven to 375°F (190°C). Grease an 8-inch square pan.
- Mix flour, sugar, baking powder, and salt in a big bowl.
- Pour in the milk and melted butter. Stir until a dough forms.
- Lightly flour the counter and roll the dough into a rectangle, about 1/4 inch thick.
- Spread peanut butter across the dough, microwaving it for 10 seconds if necessary. Then dot or swirl the jelly on top.
- Scatter chopped peanuts or chocolate chips on if desired.
- Roll up the dough, longer side first, into a log shape.
- Slice into 8-10 rolls and place them in the pan.
- Bake for about 20 minutes, checking at 18 minutes.
- Let them cool for a few minutes before serving.
Notes
- I’ve subbed in whole wheat flour when feeling marginally healthy, works okay but a bit denser.
- Brown or white sugar can be used based on availability.
- Whole milk is preferred, but almond milk works in a pinch.
- My gran swore by salted butter, so you can use that if you prefer.
- Grape jelly is classic, but raspberry feels a bit grown-up.
