Description

Delicious and easy to prepare peanut butter and jelly rolls that bring back childhood memories.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1/2 cup creamy peanut butter
  • 1/3 cup jelly or jam of your choice
  • Optional: a handful of chopped peanuts or chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8-inch square pan.
  2. Mix flour, sugar, baking powder, and salt in a big bowl.
  3. Pour in the milk and melted butter. Stir until a dough forms.
  4. Lightly flour the counter and roll the dough into a rectangle, about 1/4 inch thick.
  5. Spread peanut butter across the dough, microwaving it for 10 seconds if necessary. Then dot or swirl the jelly on top.
  6. Scatter chopped peanuts or chocolate chips on if desired.
  7. Roll up the dough, longer side first, into a log shape.
  8. Slice into 8-10 rolls and place them in the pan.
  9. Bake for about 20 minutes, checking at 18 minutes.
  10. Let them cool for a few minutes before serving.

Notes

  • I’ve subbed in whole wheat flour when feeling marginally healthy, works okay but a bit denser.
  • Brown or white sugar can be used based on availability.
  • Whole milk is preferred, but almond milk works in a pinch.
  • My gran swore by salted butter, so you can use that if you prefer.
  • Grape jelly is classic, but raspberry feels a bit grown-up.
