- 1 tsp ground cumin
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- 1 cup low-sodium vegetable broth
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and bell peppers; sauté until soft, about 5 minutes.
- Stir in minced garlic, smoked paprika, and cumin; cook for an additional 30 seconds until fragrant.
- Add rinsed black beans and vegetable broth; stir to combine and bring to a gentle simmer.
- Allow to simmer on low for 20 minutes, stirring occasionally until flavors meld and sauce thickens.
- Remove from heat; stir in lime juice and cilantro before serving.
