Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and bell peppers; sauté until soft, about 5 minutes.
  2. Stir in minced garlic, smoked paprika, and cumin; cook for an additional 30 seconds until fragrant.
  3. Add rinsed black beans and vegetable broth; stir to combine and bring to a gentle simmer.
  4. Allow to simmer on low for 20 minutes, stirring occasionally until flavors meld and sauce thickens.
