- 2 cups hash browns (frozen or freshly grated)
- 1 ripe avocado
- 2 large eggs (optional)
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp lemon juice
- ½ tsp red pepper flakes (optional)
- 2 slices whole-grain bread
Instructions
- Preheat a skillet over medium heat and add oil or butter.
- Spread the hash browns evenly in the skillet and cook without stirring for 5-7 minutes until golden brown.
- While cooking, mash the avocado in a bowl with salt, pepper, and lemon juice.
- Flip the hash browns once crispy on one side; cook for an additional few minutes until golden on both sides.
- Toast the bread and layer the crispy hash browns on top followed by mashed avocado.
- Optionally, top with a poached or fried egg and sprinkle red pepper flakes before serving.
