Description
A delicious meatloaf made with ground beef and topped with a sweet ketchup glaze.
Ingredients

- 1 1/2 pounds ground beef (80/20)
- 3/4 cup crushed buttery crackers
- 1/2 cup milk
- 2 large eggs
- 1/2 cup diced onion
- 1/3 cup ketchup (for meat mixture)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons chopped parsley (optional)
- 1/2 cup ketchup (for glaze)
- 2 tablespoons brown sugar
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground beef, crushed crackers, milk, eggs, diced onion, 1/3 cup ketchup, salt, pepper, and parsley (if using). Mix until just combined.
- Shape into a loaf on the baking sheet or in a loaf pan, about 2 inches high.
- In a small bowl, stir together 1/2 cup ketchup and brown sugar. Spread half over the top of the loaf.
- Bake for 45 minutes, then remove and spread the remaining glaze over top. Bake for another 15–20 minutes until the internal temperature reaches 160°F.
- Let rest 10 minutes before slicing. Garnish with fresh parsley if desired.
Notes
- For added flavor, consider using different herbs such as thyme or oregano.
- Leftovers can be stored in the refrigerator for up to 3 days.
