Ingredients

- 1 cup chia seeds
- 2 cups full-fat coconut milk
- 1/4 cup freshly squeezed lime juice
- 1/4 cup honey or maple syrup
- 1/2 cup toasted coconut flakes (for topping)
Instructions
- In a bowl, mix chia seeds and coconut milk. Stir well and whisk until combined.
- Line a baking dish with parchment paper. Pour chia mixture into the dish and spread evenly.
- Cover with plastic wrap and refrigerate for at least 3-4 hours or overnight until set.
- Sprinkle toasted coconut on top, cut into bars, and serve chilled.
Notes
- For a sweeter flavor, adjust the amount of honey or maple syrup to taste.
- These bars can be stored in the refrigerator for up to a week.
