A delicious and easy steak and rice bowl recipe with sautéed vegetables and fresh toppings.
Ingredients

- 1 lb flank or sirloin steak
- 1 cup white or brown rice
- 1 cup bell peppers (mixed colors)
- ½ medium red onion
- 1 avocado
- ¼ cup fresh cilantro
- 2 lime wedges
- Salt and pepper to taste
- 1 tbsp olive oil for sautéing
Instructions
- Prepare the Rice: Cook the rice according to package instructions; add salt and garlic powder if desired.
- Cook the Steak: Season steak with salt and pepper. Heat a skillet over medium-high heat, sear each side for 4-5 minutes until browned; let it rest before slicing.
- Sauté the Vegetables: In the same skillet, add olive oil and sauté bell peppers and onions for 3-4 minutes until slightly softened.
- Assemble Bowls: Layer fluffy rice in each bowl, followed by sliced steak and sautéed vegetables.
- Add Toppings: Top with avocado slices, fresh cilantro, and a squeeze of lime juice.
- Serve & Enjoy: Serve immediately or family-style for everyone to dig in!
