Delicious and creamy meatballs made with lean ground beef and served over zoodles or cauliflower rice.

- 1 lb lean ground beef
- 1/4 cup almond flour
- 1 small onion (finely chopped)
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 cup sour cream
- 1 cup low-sodium beef broth
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- In a large bowl, mix ground beef, almond flour, onion, garlic powder, oregano, salt, and pepper until well combined.
- Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- In a skillet over medium heat, melt butter and brown the meatballs on all sides.
- Remove meatballs, then pour beef broth and sour cream into the skillet. Stir until smooth.
- Return meatballs to the skillet, cover, and simmer on low for about 15 minutes until cooked through.
- Serve hot over zoodles or cauliflower rice and garnish with fresh parsley if desired.
Notes
- For added flavor, consider garnishing with fresh herbs like parsley or basil.
- These meatballs can also be served with pasta for a more traditional dish.
