- 1 cup pineapple chunks (fresh or canned)
- 2 tablespoons brown sugar

Instructions
- Rinse jasmine rice under cold water until clear; place in a medium saucepan.
- Add coconut milk and water to the rice; stir gently.
- Bring to a gentle boil over medium heat, then reduce to low, cover, and simmer for 15 minutes until liquid is absorbed.
- Remove from heat and let sit covered for another 10 minutes.
- Stir in pineapple chunks, brown sugar, and salt until evenly mixed.
- Fluff with a fork and serve warm, garnished with cilantro if desired.
