- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 8 oz cream cheese, softened
- 1 1/2 cups all-purpose flour
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup cinnamon-sugar mixture (for coating)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat the softened butter and granulated sugar together until fluffy.
- Add the cream cheese and mix until smooth. Then incorporate the egg and vanilla extract.
- In another bowl, whisk together flour, baking soda, and cinnamon. Gradually mix this dry mixture into the wet ingredients until combined.
- Use a cookie scoop to portion out dough onto parchment-lined baking sheets. Roll each ball in the cinnamon-sugar mixture.
- Bake for 12-15 minutes until edges are golden but centers are soft. Allow cooling on wire racks.
Notes
- For a deeper cinnamon flavor, add more cinnamon to the dough or the coating.
- These cookies can be stored in an airtight container for up to a week.
