- 1 cup pancake mix
- 1 large egg
- ¾ cup whole milk (or non-dairy alternative)
- 2 tbsp unsalted butter (for cooking)
- ¼ cup pure maple syrup (for serving)
- ½ cup chocolate chips or fresh blueberries (optional)
Instructions
- In a mixing bowl, combine pancake mix, egg, and milk. Whisk until smooth (lumps are okay).
- Preheat a non-stick skillet over medium heat and melt a teaspoon of butter.
- Using a small ice cream scoop, drop spoonfuls of batter onto the skillet about an inch apart.
- Add chocolate chips or berries on top before bubbles form around the edges.
- Cook until bubbles appear (2-3 minutes), then flip and cook until golden brown (another 2-3 minutes).
- Serve warm drizzled with maple syrup.
