- 1 lb ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 medium zucchini, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt, to taste
- Black pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Start by heating a large skillet over medium heat. Add a tablespoon of olive oil and let it warm until it shimmers slightly.
- Add the diced sweet potatoes first. Stir them occasionally and let them cook for about 8–10 minutes until they begin to turn golden and tender.
- Push the sweet potatoes to one side of the pan and add the remaining olive oil. Toss in the diced onion and let it soften. Add the garlic and stir for about 30 seconds until fragrant.
- Add the ground beef. Break it apart with a spoon as it cooks, letting it brown evenly.
- Once the beef is browned, stir everything together and add the zucchini.
- Sprinkle in the paprika, oregano, cumin, salt, pepper, and red pepper flakes if you like a bit of heat. Stir well.
- Cook for another 5–7 minutes, allowing the flavors to meld together. Remove from heat and sprinkle with fresh parsley.
