- 1½ cups chocolate chips
- 1½–2 cups chocolate spread or chocolate ganache
Instructions
- Make the Cookie Dough Base: Start by whisking the melted butter with the brown sugar and granulated sugar until the mixture looks smooth and glossy. Add the eggs and vanilla extract, stirring just until everything comes together. Gently fold in the flour, baking soda, and salt until a thick, soft cookie dough forms. Stop mixing as soon as no dry streaks remain.
- Form the Bottom Cookie Layer: Line a 9-inch round pan with parchment paper for easy removal. Press half of the cookie dough evenly into the bottom of the pan, slightly building up the edges. This base layer creates the structure that holds the gooey filling in place.
- Add the Gooey Chocolate Filling: Spread the chocolate spread or ganache evenly over the dough, keeping about a half-inch gap from the edges. This border is important because it helps seal the filling inside the cookie pie during baking, preventing leaks.
- Seal and Top the Cookie Pie: Flatten the remaining dough into pieces and gently lay them over the chocolate filling. Press the edges together carefully to fully enclose the center. Sprinkle chocolate chips over the top and lightly press them into the dough for extra chocolate pockets.
- Bake and Rest Before Slicing: Bake at 350°F (175°C) for 30–35 minutes, until the edges are set and lightly golden while the center remains soft. Let the cookie pie cool for 20–30 minutes before slicing so it holds its shape while keeping the chocolate center warm and flowing.
