- 3/4 cup warm water
- 1/4 cup sugar
- 1/2 cup buttermilk
- 1 egg
- 3 1/2 cups all-purpose flour
- 2 tablespoons butter, melted
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1 teaspoon vanilla extract
- Neutral oil, for frying
Instructions
- Start by dissolving the yeast in warm water with the sugar. This is one of my favorite moments in the recipe. Watching the mixture turn foamy after a few minutes feels like a small promise that something good is on the way.
- Once the yeast is active, stir in the buttermilk, egg, and melted butter. The mixture should feel smooth and rich. Gradually add the flour, mixing until a soft dough forms. It will be slightly sticky, but that’s exactly what gives these beignets their tender texture.
- Cover the dough and let it rise in a warm spot for about an hour, or until doubled in size. This resting time is where the magic happens. The dough relaxes, the flavor develops, and the final result becomes light and airy.
- After rising, gently roll the dough on a floured surface to about half an inch thick. Cut into squares. There’s no need for perfection here. Uneven edges give the beignets their charming, homemade look.
- Heat the oil to about 350°F (175°C). Fry the dough pieces in batches, turning once, until they puff and turn golden on both sides. This usually takes about one to two minutes per side. Remove and let them drain briefly.
