- 1 cup small-curd cottage cheese
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup whole milk
- 2 tsp baking powder
- 1 tbsp sugar
- 1/4 tsp salt
- 2 tbsp unsalted butter (for cooking)
Instructions
- In a mixing bowl, combine cottage cheese, eggs, and milk until smooth.
- In another bowl, whisk together flour, baking powder, sugar, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined; small lumps are fine.
- Preheat a non-stick skillet over medium heat and melt butter until bubbly.
- Pour about 1/4 cup of batter onto the skillet; cook until bubbles form (3-4 minutes), then flip and cook until golden brown (another 2-3 minutes).
- Serve warm with your choice of toppings.
Notes
- These pancakes can be served with fruits, syrup, or yogurt for added flavor.
- For a healthier option, use whole wheat flour.
