Description

A delightful combination of cucumber, smoked salmon, and creamy spreads on various types of bread.


Ingredients

Scale
  • 1 large cucumber (thinly sliced)
  • 4 slices white bread (crusts removed)
  • 2 tablespoons cream cheese (softened)
  • 1 tablespoon fresh dill (chopped)
  • to taste salt
  • 4 large eggs (hard-boiled and chopped)
  • 2 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1 tablespoon chives (chopped)
  • to taste salt
  • to taste pepper
  • 4 slices whole grain bread (crusts removed)
  • 4 slices rye bread (crusts removed)
  • 4 ounces smoked salmon
  • 2 tablespoons cream cheese (softened)
  • 1 tablespoon capers (drained)
  • 1 tablespoon fresh lemon juice

Instructions

  1. In a mixing bowl, combine cream cheese, dill, and salt. Mix until smooth.
  2. Spread the cream cheese mixture on one side of each slice of bread.
  3. Layer cucumber slices on top of the cream cheese on two slices of bread.
  4. Top with the remaining slices of bread, cream cheese side down, and cut into quarters.
  5. In a mixing bowl, combine chopped eggs, mayonnaise, mustard, chives, salt, and pepper. Mix until well combined.
  6. Spread the egg salad mixture on one side of each slice of bread.
  7. Top with another slice of bread, crusts removed, and cut into quarters.
  8. Spread cream cheese on one side of each slice of rye bread.
  9. Layer smoked salmon on top of the cream cheese on two slices of bread.
  10. Add capers and drizzle with lemon juice.
  11. Top with the remaining slices of bread, cream cheese side down, and cut into quarters.
