Description

This delicious breakfast quiche is loaded with eggs, cottage cheese, and sausage. Perfect for brunch!


Ingredients

  • 6 large eggs
  • 1/2 cup low-fat cottage cheese
  • 1/2 pound ground breakfast sausage
  • 1/4 cup diced yellow onion
  • 1/4 cup diced red bell pepper
  • 1 clove garlic (minced)
  • 2 scallions (thinly sliced)
  • 1 teaspoon chopped Calabrian chili peppers
  • 1/2 tablespoon avocado oil
  • to taste salt
  • to taste pepper
  • 1 deep dish 9 inch pie crust
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a blender, combine the eggs, cottage cheese, chopped Calabrian chili peppers, salt, and pepper until smooth.
  3. Heat a skillet over medium-high heat. Add avocado oil and brown the sausage, breaking it up as it cooks.
  4. Once the sausage is browned, add onion, bell pepper, and garlic, sautéing until tender.
  5. Pour the sausage mixture into the pie crust, top with cheddar cheese, and then pour the egg mixture over it.
  6. Bake for 20-25 minutes.
  7. Let the quiche sit for 10 minutes before slicing.
