This creamy garlic herb chicken is a delightful dish featuring boneless chicken breasts cooked in a rich sauce with mushrooms, garlic, and Boursin cheese.

- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 5 ounces Boursin Garlic & Fine Herbs Cheese (1 package)
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- Pat chicken breasts dry and season with salt and pepper. Pound to even thickness if needed.
- In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, sauté mushrooms until browned. Add garlic and cook for 30 seconds.
- Deglaze the pan with chicken broth, scraping up the browned bits.
- Lower heat and stir in Boursin cheese until melted and creamy.
- Add heavy cream, stirring until the sauce thickens slightly.
- Return chicken to skillet and spoon sauce over the top. Simmer 2–3 minutes more.
- Garnish with fresh parsley and serve hot.

- This dish pairs well with rice or pasta to soak up the delicious sauce.
- For added flavor, consider using vegetable broth instead of chicken broth.
