- Zest of 2 oranges (about 2 tablespoons)
- ½ cup fresh orange juice
- ½ cup extra virgin olive oil
- 2 tsp baking powder
- 3 large eggs, room temperature
- ½ cup whole milk (or almond/oat milk)
- 1 tsp vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Zest and juice the oranges into a bowl, ensuring you have about half a cup of juice.
- In a large mixing bowl, whisk together eggs and sugar until frothy. Add orange juice, zest, olive oil, and vanilla; mix until smooth.
- In another bowl, sift flour and baking powder together. Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.
- Pour batter into the prepared pan and bake for 30-35 minutes or until golden brown and a toothpick comes out clean. Let cool before dusting with powdered sugar.
