Delicious meatballs made with ground beef and almond flour, served in a creamy mushroom sauce.

- 1 lb ground beef (80/20)
- 1/4 cup almond flour
- 2 large eggs
- 1/2 medium onion, finely chopped
- 1 tsp garlic powder
- 8 oz mushrooms, sliced
- 1 cup heavy cream
- 1 cup low-sodium beef broth
- 1 tsp Dijon mustard
- 1 tsp paprika (sweet or smoked)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine ground beef, almond flour, eggs, onion, garlic powder, salt, and pepper. Mix until just combined.
- Roll mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
- Bake for 20 minutes or until golden brown.
- In a skillet over medium heat, sauté mushrooms in oil until golden brown (5–7 minutes).
- Add beef broth and heavy cream to the skillet with mushrooms; stir in Dijon mustard and paprika. Simmer until thickened (about 5 minutes). Season with salt and pepper.
- Once meatballs are cooked, add them to the sauce and gently stir to coat.
- Serve warm over zoodles or cauliflower rice.
