Ingredients

  • 1 cup grated carrots
  • 1 cup grated zucchini (squeezed dry)
  • 1 cup shredded apples
  • ½ cup chopped nuts or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat eggs and vegetable oil until well combined.
  4. Gently fold in grated carrots, zucchini, and shredded apples into the wet mixture.
  5. Gradually add the dry mixture to the wet ingredients until just combined.
  6. Divide the batter between the prepared loaf pans and top with nuts or dried fruit if desired.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool for 10 minutes before transferring to wire racks.
