Description

Ingredients

  • 3 oz dark chocolate (at least 60% cocoa)
  • 3 oz pink ruby chocolate
  • 1/2 cup granulated sugar
  • 2 whole eggs
  • 2 egg yolks
  • 1/4 cup all-purpose flour
  • Optional: Whipped cream for serving

Instructions

  1. Preheat oven to 425°F (220°C). Grease four ramekins and dust with cocoa powder.
  2. Melt unsalted butter, dark chocolate, and pink ruby chocolate in a heatproof bowl over simmering water until smooth.
  3. In another bowl, whisk together granulated sugar, whole eggs, and egg yolks until fluffy.
  4. Gently fold melted chocolate mixture into the egg mixture until combined.
  5. Sift in flour and mix gently until no flour streaks remain.
  6. Pour batter into prepared ramekins and bake for 12-14 minutes until edges are firm but centers are soft.
  7. Let cool for one minute before flipping onto plates; serve immediately with whipped cream.
