Delicious bunny-themed cupcakes perfect for any celebration!


Ingredients

  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
  • ½ cup unsalted butter (room temperature)
  • 2 cups confectioners sugar
  • 12 Tablespoons whole milk
  • 1 teaspoon vanilla extract
  • pinch salt
  • ½ cup white sanding sugar (or white sprinkles or coconut)
  • 12 large marshmallows
  • 2 Tablespoons pink sanding sugar
  • 24 mini chocolate chips
  • 12 pink jelly beans

Instructions

  1. Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, cream butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in eggs, one at a time, then mix in vanilla.
  4. In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  5. Add the flour mixture in two additions, alternating with the milk, mixing just until combined.
  6. Divide batter evenly among liners, filling each about two-thirds full.
  7. Bake 16–18 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
  8. Beat butter until smooth and creamy. Gradually add confectioners sugar.
  9. Mix in vanilla, salt, and 1 tablespoon milk. Add more milk if needed until the frosting is smooth and spreadable.
  10. Spread frosting generously over each cooled cupcake.
  11. Sprinkle or gently roll the frosted cupcake in sanding sugar to create the bunny’s “fur.”
  12. Cut each marshmallow diagonally to make two ear shapes. Press the sticky cut sides into pink sugar.
  13. Cut each jelly bean in half to create noses.
  14. Use a small dab of frosting to attach two marshmallow ears to the frosted cupcakes.
  15. Add two mini chocolate chips for eyes and half a jelly bean for the nose.

Notes

  • For a fun variation, try using different colors of sanding sugar.
  • Ensure cupcakes are completely cooled before frosting to prevent melting.
