Description

Delicious crispy baby potatoes coated with Parmesan cheese and herbs, perfect as a side dish.


Ingredients

  • 1 lb baby potatoes
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the baby potatoes thoroughly, then slice them in half lengthwise.
  3. In a large bowl, toss the halved potatoes with olive oil until fully coated.
  4. Sprinkle garlic powder, oregano, salt, and pepper over the oiled potatoes and toss again until evenly coated.
  5. Add grated Parmesan cheese and gently mix to ensure all potatoes are covered.
  6. Arrange the potatoes on a parchment-lined baking sheet and bake for 25-30 minutes until golden brown and crispy.
