Ingredients

  • 4 chicken thighs
  • 4 ounces ramen noodles
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 tablespoons soy sauce
  • 2 tablespoons sesame oil

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large pot, heat a tablespoon of sesame oil over medium-high heat.
  3. Add the chicken thighs and sear them until golden brown on both sides, about 5-7 minutes per side. Once cooked, remove them from the pot and set aside.
  4. In the same pot, add a bit more sesame oil if needed, then toss in minced garlic and grated ginger. Sauté for about 1 minute until fragrant, taking care not to burn them.
  5. Pour in the chicken broth and soy sauce, scraping the bottom of the pot to lift any delicious brown bits. Bring it to a gentle simmer.
  6. Add the ramen noodles to the pot and cook according to package instructions, usually around 4-5 minutes. If you’re using fresh noodles, they may take less time.
  7. Reduce the heat to low, and stir in the heavy cream. Mix well until everything is combined and heated through.
  8. Add the spinach and mushrooms to the pot, letting them wilt and soften in the creamy broth for a couple of minutes.
  9. Slice the seared chicken thighs and return them to the pot. Stir to combine everything, letting it warm through for another minute.
  10. Ladle the ramen into bowls and garnish with your favorite toppings, such as sliced green onions, sesame seeds, or a drizzle of chili oil for an extra kick.
