Description

A delicious creamy garlic chicken dish with crushed tomatoes and fresh basil.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté minced garlic until fragrant (about 1 minute).
  2. Add chicken breasts and sear until golden brown on both sides (about 5 minutes per side). Remove from pot.
  3. Add crushed tomatoes and chicken broth to the pot, stirring well.
  4. Stir in Italian seasoning, salt, and pepper. Simmer gently for about 10 minutes.
  5. Lower heat and mix in heavy cream until combined. Let it simmer for an additional 5 minutes.
  6. Shred cooked chicken using forks, then return to the pot and stir well.
  7. Serve hot with fresh basil on top.
