Description

Delicious homemade chocolate chip cookies with a touch of brown butter for extra flavor.


Ingredients

  • 1 cup (213 grams) brown sugar
  • ¼ cup (50 grams) white sugar
  • 2/3 cup (151 grams) brown butter
  • 1 tbsp vanilla extract
  • 2 eggs (room temp, not cold)
  • ¼ tsp espresso powder (optional)
  • 1 tsp baking soda
  • ½ tsp cornstarch
  • 2 ¾ cup (220 grams) flour
  • 12 cups (170340 grams) chocolate chips

Instructions

  1. Brown the butter in a light-colored saucepan over medium heat for 5-7 minutes, swirling occasionally, until it becomes amber with a nutty aroma and brown bits form at the bottom. Transfer to a heat-safe bowl and let cool for 10 minutes.
  2. Mix cooled brown butter with both sugars in a large bowl until combined. Add vanilla extract and eggs, beating until the mixture becomes lighter in color and slightly fluffy.
  3. Combine flour, baking soda, cornstarch, salt, and espresso powder (if using) in a separate bowl, whisking to distribute everything evenly.
  4. Add the dry ingredients to the wet ingredients in two batches, mixing until just combined. Be careful not to overmix.
  5. Fold in chocolate chips gently with a spatula, reserving about 1/4 cup of chips to press into the tops of the dough balls before baking.
  6. Scoop dough using a 2-tablespoon cookie scoop onto a parchment-lined plate or baking sheet. Cover and refrigerate for at least 1 hour (or up to 24 hours for even better flavor development).
  7. Preheat oven to 350°F (175°C) and arrange chilled dough balls on parchment-lined baking sheets about 2 inches apart. Bake for 10-12 minutes until edges are set but centers still look slightly underbaked.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
