- 8 oz dark chocolate, chopped
- 1/2 cup heavy cream
- 1/2 cup fresh raspberries, pureed
- 1 tsp vanilla extract
- Cocoa powder for dusting
Instructions
- Chop the dark chocolate and place it in a bowl.
- In a saucepan, heat the heavy cream until it just begins to simmer.
- Pour the hot cream over the chocolate and let it sit for 2 minutes.
- Stir until the chocolate is fully melted and smooth.
- Add the raspberry puree and vanilla extract, mixing well.
- Refrigerate the mixture for about 2 hours until firm.
- Once firm, scoop out small portions and roll them into balls.
- Roll the truffles in cocoa powder to coat.
- Store in the fridge until ready to serve.
Notes
- For extra flavor, consider adding a pinch of sea salt to the mixture.
- These truffles can be stored in an airtight container in the fridge for up to a week.
