Key Ingredients for Cheesy Twice Baked Potatoes

Russet Potatoes: The heart of cheesy twice baked potatoes is the russet potato. I always opt for large russets because their fluffy interior makes the perfect canvas for all those delicious toppings. Their thick skin is not only hearty but also provides a satisfying crunch after baking.

Olive Oil: A drizzle of extra-virgin olive oil is essential in this recipe. It enhances the flavor, while also helping to crisp up the skin. The rich, fruity notes of the olive oil elevate the natural potato taste, creating a crave-worthy bite.

Cheddar Cheese: For me, sharp cheddar cheese is the star ingredient. It melts beautifully into the creamy filling, lending a rich and tangy flavor that complements the potatoes perfectly. Plus, who can resist gooey cheese?

Sour Cream: Sour cream adds a velvety texture and a tangy contrast to the cheese. It’s the secret ingredient that transforms your filling into something incredibly smooth and luscious, ensuring every bite is heavenly.

Chives: Fresh, diced chives provide a burst of color and a mild onion flavor that harmonizes beautifully with cheesy goodness. They’re a simple way to brighten up your twice baked potatoes, both in taste and presentation.

Cooking Tips and Notes for Cheesy Twice Baked Potatoes

Perfectly Baking Potatoes
To create the ultimate cheesy twice baked potatoes, start by selecting the right type of potatoes. Russets are an excellent choice due to their starchy texture, which results in a fluffy interior. Be sure to poke holes in the potatoes before baking to allow steam to escape, preventing them from bursting. An ideal baking time is around 45-60 minutes at 400°F (200°C), ensuring they are tender inside while perfectly crisping the skin.

How to Achieve Creamy Filling
The secret to that luscious filling lies in the ingredients. After scooping out the potato flesh, mash it with sour cream, cream cheese, and plenty of shredded cheese until smooth. Adding a little milk or butter can also help to achieve that desired creaminess. For an extra flavor boost, consider mixing in some garlic powder or chives—this is your chance to get creative!

Preventing Overbaking
To avoid overbaking your cheesy twice baked potatoes, keep an eye on them during the second bake. Once you’ve returned the potato halves to the oven, aim for just 15-20 minutes until they’re heated through and the cheese is bubbly. Checking them early can help maintain that tender texture while ensuring the cheese melts beautifully without becoming too hard or dry.

Description

These twice-baked cheddar potatoes are creamy, cheesy, and loaded with flavor. Perfect as a side dish or a comforting main course!

Ingredients

Scale
  • 4 large russet potatoes, (scrubbed)
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt, (as needed)
  • Freshly ground black pepper, (as needed)
  • ¼ cup whole milk
  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons diced chives, (divided)
  • 2 tablespoons unsalted butter, (melted)

Instructions

  1. Heat oven to 400ºF (200ºC). Poke holes with a fork all over the potatoes then rub with the olive oil and season with salt and pepper.
  2. Arrange on a baking sheet and bake until the insides of the potatoes are soft, about 1 hour, rotating half way through. You should be able to easily pierce the potato with a knife. Remove from the oven and let cool.
  3. Slice the top third of the potato off, lengthwise. Use a spoon to scoop out the inside of the potato, leaving about a ¼-inch border of potato to form small boats.
  4. Add the flesh of the potatoes to the bowl of a stand mixer fitted with a paddle attachment. Be sure to scoop the flesh of the tops of the potatoes as well then discard the tops.
  5. Add the milk, sour cream and cheese, mixing until just smooth. Season with salt and pepper to taste then add 1 tablespoon of the chives.
  6. Either mound the filling into the potato boats or for a smoother, mound half the mixture into the boats and add the remaining half to a pastry bag fitted with a large star tip and pipe the remaining mixture onto the top of the potatoes. Gently brush the tops with butter.
  7. Lower oven to 375ºF (190ºC). Arrange the filled potatoes on a baking sheet and bake until the filling is heated through and the tops are browned, about 20 minutes. Top with the remaining chives.

Notes

  • For an added touch, sprinkle extra cheese on top before the final baking step.
  • These can be made ahead of time and stored in the refrigerator until ready to bake.
