Delicious and healthy black bean brownies that are rich and fudgy.

- 1 can (15 oz) low-sodium black beans, rinsed and drained
- 1/2 cup unsweetened cocoa powder
- 1/2 cup pure maple syrup
- 2 large eggs (or 2 flax eggs for vegan)
- 1 tsp pure vanilla extract
- 1 tsp baking powder
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a blender or food processor, combine black beans, cocoa powder, maple syrup, eggs, vanilla extract, and baking powder. Blend until smooth.
- Pour the mixture into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling before cutting into squares and serving.
Notes
- For a vegan option, substitute eggs with flax eggs.
- Make sure to rinse the black beans to reduce sodium content.
