Description

Delicious and healthy black bean brownies that are rich and fudgy.


Ingredients

  • 1 can (15 oz) low-sodium black beans, rinsed and drained
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup pure maple syrup
  • 2 large eggs (or 2 flax eggs for vegan)
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a blender or food processor, combine black beans, cocoa powder, maple syrup, eggs, vanilla extract, and baking powder. Blend until smooth.
  3. Pour the mixture into the prepared pan and spread evenly.
  4. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow cooling before cutting into squares and serving.

Notes

  • For a vegan option, substitute eggs with flax eggs.
  • Make sure to rinse the black beans to reduce sodium content.
